This is covered quite in detail in The New Cider Maker's Handbook... In your case, you could consider an ebuillometer, however this is a relatively expensive instrument. But it is fast and quite accurate. I think it is a quite justified investment when making cider commercially. Also the Residue (or Honneyman) method, which requires a high precision hydrometer in the range of 0.995 to 1.020 approximately.
