In addition to smell and taste, do you notice anything harsh and/or a catch in the back of the throat as you swallow. If none of that then vinegar (acetification) can be fairly ruled out. Have you tested the TA (acidity) on the good and bad batches? Sometimes the pectin chains split in such a way that they impart a very sharp even bitter taste.
