I'll make some comments/ replies as janitor in the next issue of the digest...I wanted the rest of you to see the first round of public comment. (I have re-arranged articles for this issue, to put topics about cider ahead of musings on the Cider Digest itself.) Some of the off-list commenters felt that low traffic isn't a bad thing as long as the quality is high, and that the "push" nature of the digest (it comes to you) is preferable to "pull" (a forum you have to go check). The digest should be easy to search. Replying is clunky. John Coates Bedminster, NJ ------------------------------ Subject: suggestions for finishing up an ice cider From: Darlene Hayes Date: Sat, 1 Apr 2017 16:46:24 -0700 Hi all, I'm attempting a sort of ice cider this year (sort of because I had to freeze my must in a freezer instead of using natural cold), and it's coming along quite well so far. I've followed the general instructions in Claude's book with the exception that I saved a little of the fresh juiceto get a native ferment going and pitched some of that into my concentrate. I've been graphing it's progress, and the curve looks pretty much like the one in the book. The SG is at about 1.090 now and I'm planning on taking it to 1.086 for a final alcohol content around 11%. My plan all along has been to cold crash the fermentor in an extra refrigerator set to it's coldest setting, then rack it off for the final time. Does anyone have any other thoughts on how I might stabilize the finished cider? I don't have a pasteurization set up, although I could probable figure something like that out if need be. I also think there is still a robust demand for amateur cider makers to ask questions about cider making and cider apple growing. I have read each email, and have never asked questions but have several. 1) I can't seem to get the appropriate amount of carbonation to remain in my cider after bottling. I have used sugar, have tried co2, have used a brite tank but can't seem to get adequate carbonation. Any suggestions? 2) pasteurization. Yes or no. Do commercial cider pasteurize? I appreciate what you do, I can only assume that you donate a lot of free time to folks like me. I hope you realize how much you have helped the small guy. I only started making cider a little over a year ago, but I have found the Cider Digest enormously useful not only for the information it provides and as a source of answers to the questions I have posted, but also as a good way to keep tabs on what other cider makers are up to. I have also made some valuable contacts with other cider makers as a result of the Cider Digest. Admittedly, I have only posted to the digest twice in the last year, and I have never attempted to address anyone else's question. But, I have LOTS of questions. I could post more of my questions to the digest if it would give you more of an incentive to continue. A bulletin board system like the cider workshop forums seems like a better place to find and get information then an email digest. Perhaps the purpose of the Cider Digest can change to a news and information newsletter and leave the questions and answer discussion to a bulletin board format that is better suited for the job. I like getting relevant cider information in my inbox, but find it hard to follow a thread discussion on a digest format that is so infrequent.
