Since sulphite can both control microbes and limit oxidation, it's really useful at racking and bottling to prevent unwanted changes to the cider. I have found that it's much easier to avoid film yeast if I include a small dose (30-40ppm) of S02 at racking, kegging, or bottling. I enjoy the qualities I get from natural ferments, but later in the process I use S02 to ensure better shelf life. I guess it depends on how important the sulphite-free aspect is. The Courtyard Hotel, Grand Rapids, Michigan - Staff & Management - they really have our needs dialed in for pulling off this event. VanderMill Cidery, Grand Rapids, MI and Twin Pines Cidery, Ontario - Gathering spots for competition samples. Prime Time Brewers - The local homebrew club that helps with a lot of unpacking of samples and other functions of GLINTCAP Stewards - 29 per day for 2 days straight. This is very crucial in a blind judging. There are responsible for pouring and delivering individual samples to judges. To many to name but much appreciated. Judges - once again, to many to individually name but our list of judges can be found at www.glintcap.org . GLINTCAP strives for this competition to be a judging of our peers and our list expresses that. Rex Halfpenny - Front of House Captain - Judges Liaison to staff and keeps judges on pace. Corrie Wolosin & Mary Halfpenny - Score Sheet Tabulation - Brian West & Jeffery Cottrell - Cellarman - This is the literal heavy lifting. Michelle Foik - Director of Stewards - 1200+ samples to 80+ judges, need I say more. (a dynamo) Charles McGonegal - Judges Captain - Leads judges training prior to competition. Eric West - Competition Director - registration, unpacking, and organization, of 1,200 samples then develop 29 judges panels that doesn't let somebody judge their own product (can happen in peer review) and tabulate all the scores and disseminate, then take on the task of getting medals custom printed for each individual cider that achieved at least a bronze. Plus, send back all score sheets to individual entrants. The Data entry alone is huge, add the other stuff and that makes a busy guy. The glue that keeps it all together. GLINTCAP for me is more about collegiality, cider is still somewhat new and small here in the USA and GLINTCAP is a vehicle for folks in the industry to talk about cider. This is the second largest gathering of cider industry folks in the states and great way to learn from others. We strive to improve GLINTCAP yearly. More divisions for cider's evolving styles and improving the judging pool and while improving judges palette. People should take pride in any of their medals, a medal does not come cheap in this competition, only around 72% of items receive a medal and we rarely crack 10% of entries to gold medal status.
